Etruscan Cabbage Bread

This unusual recipe tops refrigerated biscuitsx with chopped cabbage cooked together with onions and caraway seeds.

Prep Time: 20 minutes

Cook Time: 40 minutes

Ingredients:

  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 4 cups bagged coleslaw mix
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. caraway seed
  • 1/4 cup Dijon mustard
  • 2 tablespoons sour cream
  • 1 (14-ounce) package refrigerated pizza dough

Preparation:

In heavy skillet saute cabbage, onion, and garlic in butter and olive oil for 2-3 minutes. Cover skillet and cook over medium heat for 10-12 minutes until cabbage and onions are crisp tender. Stir occasionally during cooking. Sprinkle with salt, pepper, and caraway seed; turn heat to very low while you prepare the crust.

Preheat oven to 375 degrees F. Meanwhile, unroll dough and press into 13x9" pan or 12" pizza pan; press onto bottom and 1/2" up sides. Make sure the crust is even and perforations are well sealed.

If necessary, drain cabbage mixture well. Stir mustard and sour cream into cabbage mixture. Spoon hot cabbage mixture into crust.

Bake at 375 degrees for 18-25 minutes or until crust is deep golden brown. Cut into wedges to serve. 8-10 servings
