You can use other fish fillets in this delicious and healthy recipe; orange roughy or grouper would be delicious.

Ingredients:
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 14 oz. can diced tomatoes, undrained
- 1 cup chunky salsa
- 1 Tbsp. tomato paste
- 1/2 cup flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 lb. red snapper fillets, cut into serving size pieces
- 1/4 cup oil
- 1/4 cup sliced green olives
Preparation:
In a medium skillet, saute onion and garlic in olive oil and butter until tender, about 5 minutes. Add tomatoes and simmer for 4-5 minutes until blended. Add salsa and tomato paste and cook 1 minute longer. Remove from heat and cover to keep warm.Combine flour, salt and pepper in a shallow pan. Coat fish with flour mixture. Heat 1/4 cup oil in a heavy skillet and fry the fish in oil 4-5 minutes on each side until fish is golden brown and flakes easily when ted with fork. Place cooked fish on serving plate and spoon sauce over fish. Garnish with olives. 8 servings
