Stuffed Tex-Mex Burgers

You can use Homemade Taco Seasoning Mix instead of the purchased variety if you'd like.

Prep Time: 20 minutes

Cook Time: 15 minutes

Ingredients:

  • 1-1/2 lbs. ground beef
  • 3 Tbsp. finely chopped onion
  • 2 Tbsp. taco seasoning mix OR Homemade Taco Mix
  • 1/8 tsp. pepper
  • 2 Tbsp. diced green chilies, drained
  • 8 slices Monterey Jack cheese with jalapenos
  • 4 kaiser rolls, split
  • 1/2 cup salsa

Preparation:

Prepare grill and heat. In large bowl, mix beef, onion, chilies, pepper, and taco seasoning mix. Shape into 8 thin patties. Top 4 patties with 1 slices of cheese each and top with remaining patties. Press edges to seal.

Grill, covered, 4-6" from medium coals for 14-16 minutes, turning once, until burgers are thoroughly cooked and no longer pink in center, or are 160 degrees when tested with meat thermometer (be sure you're not testing the temperature of the cheese filling!). Top with more cheese and let melt while you grill the split kaiser rolls. Serve burgers with salsa on rolls. 4 sandwiches
