Veggie Burgers

These delicious hot sandwiches have a very meaty taste, even though there's no meat in them!

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 15 oz. can kidney beans, rinsed and drained
  • 1/2 cup rolled oats
  • 1/2 cup finely chopped fresh mushrooms
  • 1/2 cup finely chopped onion
  • 1 carrot, shredded
  • 1/2 cup chopped red bell pepper
  • 2 garlic cloves, minced
  • 2 Tbsp. ketchup
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper

Preparation:

Combine all ingredients in a food processor or blender. Pulse or blend until coarsely chopped. Do NOT puree. Chill mixture, then shape into 4 1/2" thick patties. Wrap and freeze.

To cook, thaw patties in microwave or overnight in the refrigerator, then broil 4-6" from heat for 10-12 minutes or until patties are thoroughly cooked. Serve on hamburger buns with lettuce, tomato, ketchup and mustard. 4 burgers
