Veggie Appetizer Pizza

This wonderful appetizer recipe can be made and served to company when it's so hot outside that you just don't want to cook.

Prep Time: 25 minutes

Ingredients:

  • 1-1/4 cups finely chopped fresh vegetables
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper
  • 1/4 cup chopped Kalamata olives
  • 4 oz. container spreadable garlic and herb cheese
  • 5 (6") whole wheat flatbreads
  • 1 cup shredded Cheddar cheese
  • 1/4 cup shredded Havarti cheese

Preparation:

For the vegetables, you can use a combination of broccoli, carrots, red onion, yellow summer squash, mushrooms, and bell peppers. Chop finely and toss vegetables with salt, pepper, olives and lemon peel. Spread the garlic and herb cheese over each flatbread and top with vegetable mixture. Sprinkle each with cheddar and havarti cheeses. Cut each into 6 wedges to serve. 15 servings
