After much deliberation and consideration, I decided to celebrate a new month, this first full month of spring, by printing my favorite contest winning recipe of all time. I've kept this a secret up until now, because it was a winner from a recipe contest held 40 years ago, and not many people know the recipe.
It's served at every family gathering, and the recipe I turn to most often when I need some comfort food fast. There's something about the combination of ingredients that is really special. I get requests for the recipe every time I serve it.
Ready? Here it is.
Clam Muffins
eggs
pancake mix
condensed cream of mushroom soup
1 bouillon cube
boiling water
Kitchen Bouquet
clams, chopped
chopped walnuts
In medium bowl, beat eggs well. Add pancake mix and soup and stir gently just to blend. Dissolve bouillon cube in boiling water, then add to the batter along with the Kitchen Bouquet, clams and walnuts. Fill muffin cups 3/4 full of this mixture, and bake at.....
