It's no surprise that we all have been craving comfort food in the past
week. Worldwide events have everyone on edge. I have gone through my
oldest recipe collections looking for sure tried and true winners, listed
below.
Then as I was watching Nigella Bites
(my favorite show), I saw her make a bread pudding, and I remembered the
first recipe I ever saw in a fiction book. Mrs.
Coverlet's Magicians is a wonderful story I read to this day; all
about the Persever family and their beloved housekeeper, Mrs. Coverlet.
Due to an accident with some chocolate chips, Mrs. Coverlet and the
youngest Persever (the Toad) invent a new recipe - Chocolate Chip Bread
Pudding. And the intrepid housekeeping goes on to win a national baking
contest for her exciting new recipe!
Most comfort foods, as we know, are warm, soft, flavorful foods that
remind us of our childhood (a safer time, if only in our memories). Make
some of your favorite comfort foods this week, and try some of mine. And
we can all hope for peace and a more comforted world together.
The Recipes
- Mrs.
Coverlet's Bread Pudding
Here's the recipe from the children's
fiction book. Savor the smooth creaminess of this pudding as you read
about Mrs. Coverlet, or your own favorite children's book.
- Danish
Puff Coffee Cake
This is one of the first recipes I remember
making; in fact, I pretended I was Graham Kerr (the Galloping Gourmet)
teaching an invisible audience! This is a wonderful recipe; try it this
week.
- Crockpot
Macaroni and CHeese
Wow - a recipe for the ultimate comfort
food, made in my favorite appliance! What could be better?
- Crockpot
Mashed Potatoes
Oh, yum. Lots of cream cheese and butter
catapaults this fantastic recipe to the top of the comfort food list.
- French
Toast
Try making French Toast for dinner! This easy recipe can be
served with cheese sauce or chili for a savory dinner. Or bring on the
maple syrup and powdered sugar for a traditional treat.
- Creamy
Cherry Dessert
I love this recipe. It's a definite throwback to
the 1960s and absolutely delicious.
- Skillet
Cookies
This very, very old recipe for no-bake cookies is made
by melting dates with sugar in a skillet, then stirring in rice krispies
and rolling the cookies in powdered sugar. They are luscious!
- Chocodiles
Chocolate and peanut butter are, of course, the world's most perfect
food combination. This easy and rich bar recipe has been in my files for
decades.
- Beef
Cheese Pizza
I'm making this delicious, easy quiche-like pizza
for dinner tonight. With a green salad and some fresh fruit, this is one
of the best meals.
- Tunnel
of Fudge Cake
This Pillsbury Bake-Off winner is a classic comfort
food. A rich tunnel of fudge forms in the center of a moist bundt cake.
- Roast
Chicken with Almonds
Dinah Shore's first cookbook is the source
for this super easy, delicious recipe.
- Alpine
Meatballs
This recipe comes from a cheese recipe contest I
judged back in the 1990s. The tender meatballs are covered in a
wonderfully rich, savory swiss cheese sauce.
- Heavenly
Cheese Mold
This gelatin salad combines cheddar cheese with
pineapple and whipped cream. Now, before you dismiss this recipe, please
try it. It's smooth, creamy, and delicious with a wonderful flavor -
trust me!
- Bean
and Bacon Soup
Bean and Bacon soup is one of the first condensed
soups I remember eating as a child. This scratch version is my mother's
recipe, and far superior to the canned version. When this soup is
simmering on the stove, it feels like home. Crockpot directions are
included.
