Since Thanksgiving is only a few weeks away, it's time to start planning. And I have a fabulous tip for you! Dr. Peter Snyder, Jr. sent me the results of a study conducted at the Hospitality Institute of Technology and Management about cooking your turkey from the frozen state. Because of the greater mass of the breast, it will cook more slowly than the dark meat and will be more moist and tender when the bird is safely cooked. This study is thorough and well documented, so you can be assured it is safe and accurate. I plan to cook my turkey this way from now on.
