Prep Time: 10 minutes

Cook Time: 9 minutes

Total Time: 19 minutes

Yield: 6 servings

Ingredients:

  • 1 (3-ounce) package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup creamy blue cheese salad dressing
  • 1/3 cup crumbled blue cheese
  • 1/2 teaspoon dried thyme leaves
  • 1/3 cup chopped shelled pistachios
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 (16-ounce) box frozen potato pierogies

Preparation:

In medium bowl, beat cream cheese until soft. Gradually add mayonnaise, beating until smooth. Add salad dressing, beating until smooth. Stir in blue cheese, thyme, and pistachios; set aside.

In large skillet, melt butter and olive oil over medium-high heat. Add pierogies in a single layer. Cook for 4 minutes, shaking skillet occasionally. Carefully turn pierogies, reduce heat to medium, and cook for another 4-5 minutes or until pierogies are light golden brown and hot. Place on serving platter and serve immediately with dip.
