Grilled Curried Chicken Wings

I love the flavor of curry. Add it to grilled chicken wings for a fabulous appetizer that will whet your appetite.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: Serves 4-6

Ingredients:

  • 2 pounds chicken wings, tips removed, cut into two pieces each
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1/4 cup honey
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup mango chutney
  • 1/2 cup mayonnaise
  • 1 teaspoon curry powder

Preparation:

Prepare chicken wings. For marinade, in small bowl, combine olive oil, 1 tablespoon curry powder, honey, chicken broth, garlic, salt and pepper and mix well.

Place chicken wings in heavy duty plastic bag. Pour marinade over them. Seal bag, place in casserole dish, and marinate in the fridge for 2-24 hours.

In small bowl, combine mango chutney, mayonnaise, and 1 teaspoon curry powder. Blend well, cover, and refrigerate.

When ready to eat, prepare and preheat grill for two sided heat (one side with 3-4 layers of coals; the other with 1 layer; for gas grill, heat all burners, then turn one burner off). Remove wings from marinade; discard marinade.

Grill wings for 10 minutes over direct medium coals, then turn wings and place over lower heat. Grill for 10-12 minutes, covered, until wings register 165 degrees F.

Serve wings with chutney mixture.
