Ingredients:
- 2 pounds chicken wings, tips removed, cut into two pieces each
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- 1/4 cup honey
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup mango chutney
- 1/2 cup mayonnaise
- 1 teaspoon curry powder
Preparation:
Place chicken wings in heavy duty plastic bag. Pour marinade over them. Seal bag, place in casserole dish, and marinate in the fridge for 2-24 hours.
In small bowl, combine mango chutney, mayonnaise, and 1 teaspoon curry powder. Blend well, cover, and refrigerate.
When ready to eat, prepare and preheat grill for two sided heat (one side with 3-4 layers of coals; the other with 1 layer; for gas grill, heat all burners, then turn one burner off). Remove wings from marinade; discard marinade.
Grill wings for 10 minutes over direct medium coals, then turn wings and place over lower heat. Grill for 10-12 minutes, covered, until wings register 165 degrees F.
Serve wings with chutney mixture.
