Sweet potato fries are so good; they're slightly sweet and creamy with a fabulous crisp crust. Serve them with a creamy chutney dip accented with curry powder. Yum.

Ingredients:
- 4 sweet potatoes, peeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 teaspoons sugar
- 1 teaspoon curry powder
- 3/4 cup mayonnaise
- 1/4 cup chutney
- 1-2 tablespoons curry powder
- 1 teaspoon honey
Preparation:
Preheat oven to 425 degrees F. Line a baking dish with foil and spray foil with nonstick cooking spray.
Cut the sweet potatoes into 1/4" slices, then drizzle with oil and arrange on prepared baking dish. In small bowl, combine salt, sugar, and 1 teaspoon curry powder; mix well. Sprinkle over the fries and toss to coat. Arrange in single layer.
Bake for 25-35 minutes or until tender and crisp, stirring once during baking time. While the potatoes are baking, combine mayonnaise, chutney, 1-2 tablespoons curry powder and honey and mix well. Serve the fries with the chutney dip.
