Yes, this appetizer looks like a bleeding cheese. But the surprise is the taste! The sweet preserves are the perfect complement to the smooth, melting, and salty cheese and crisp pastry. YUM.

Prep Time: 0 hour, 10 minutes

Cook Time: 0 hour, 25 minutes

Ingredients:

  • 1 sheet frozen puff pastry, thawed
  • 1 round Brie or Camembert cheese
  • 1/2 cup cherry preserves

Preparation:

Preheat oven to 375 degrees F. Place the pastry on a lightly floured surface and roll out gently until it's about 12" x 12". Spoon the cherry preserves into a circle in the middle of the pastry. Cut off about 1" of the corners.

Place the cheese on top of the preserves. Bring the pastry up and around the cheese, pleating and sealing the edges by pinching them together. Turn the pastry covered cheese over and place on a cookie sheet. You can use the trimmed edges to make decorations for the top - I just made a simple quarter moon.

Bake for 22-27 minutes or until the pastry is puffed and golden brown. Remove to a serving plate and let cool for 10 minutes before cutting into wedges to serve. Serves 8
