Brie with Cherry Chutney

This cherry chutney recipe is also fabulous as a sandwich spread. Try it with leftover Easter or Christmas ham.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Ingredients:

  • 1/2 cup dried cherries
  • 1 lb. dark sweet cherries, pitted and chopped
  • 3/4 cup brown sugar
  • 1 Granny Smith apple, peeled and finely chopped
  • 1/2 cup finely chopped onion
  • 1/3 cup apple cider vinegar
  • 1/4 tsp. allspice
  • 1/4 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 tablespoons cornstarch
  • 8 oz. wheel brie or camembert cheese

Preparation:

Combine all ingredients except brie in heavy saucepan and stir to mix. Bring to a boil over medium high heat. Reduce heat to medium low and cook gently for 45-50 minutes until thickened, stirring occasionally. Cool at least one hour before serving.

Heat brie in the microwave on HIGH for 30 seconds to one minute, or until softened. Pour 1 cup cherry chutney over brie and serve with crackers and french bread.

You can also bake the brie at 350 degrees F for 10-15 minutes until softened.

I made this like traditional baked brie, baked inside puff pastry, and took it into work for a potluck. It was a big hit! The hardest part of making it was pitting the fresh cherries - other than that, it's pretty simple to make. The only thing I didn't really like is that the apple cider vinegar comes out a bit strong. Next time I might do a dash of vinegar and the rest plain old apple juice. Also, be aware that you're going to end up with about twice as much chutney as you can put on top of a wheel of brie. But that just means you have leftovers to put in the freezer and use next time you make baked brie! As for the final product, the reviews at work were great - one person said it was like brie plus a cherry pie, and you really can't get much better than that!
