Buffalo Fish Sticks

Buffalo Fish Sticks is a quick and easy recipe from my About.com cookbook, Shortcut Cooking. It's delicious and a nice change of pace from regular fish. You can serve this as an appetizer or as a main dish.

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutes

Ingredients:

  • 1/2 cup sour cream
  • 1 cup blue cheese salad dressing
  • 1/2 cup chopped celery
  • 1-1/2 pounds fish fillets
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 egg
  • 1/2 to 2 teaspoons hot sauce
  • 1 cup plain dry bread crumbs
  • 1 teaspoon dried red chili powder
  • 1/2 cup peanut oil

Preparation:

In small bowl,combine sour cream, salad dressing, and celery; mix, then cover and refrigerate. Cut the fish crosswise into 1-inch wide sticks.

On shallot plate, combine flour, salt, and cayenne pepper. In a bowl, beat egg with hot sauce. And on another shallow plate, combine crumbs and chili powder.

Dip the fish sticks first in flour mixture, then in egg mixture, then into bread crumb mixture. Place on wire rack.

Heat oil in heavy skillet over medium-high heat. When oil temperature reaches 375 degrees F, add coated fish sticks. Fry, turning once, for 4-5 minutes or until fish is crisp, golden brown, and cooked through. Immediately serve with sour cream mixture.
