Cheese Straws

This is the kind of cheese straw that you force through a cookie press. For the type that you roll out and cut into strips or squares, see Zesty Cheese Straws. The secret to these straws is to make sure the butter and cheese are very soft; leave the butter out of the fridge overnight, and leave the shredded cheese out, covered, for 1 hour before making the dough.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1/2 cup butter, very soft
  • 3 cups shredded Cheddar cheese
  • 1-1/2 cups flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 2 tablespoons heavy cream

Preparation:

In large bowl, combine butter and cheese and mix well. Add flour, paprika, salt, pepper, and cream and mix until combined. Place in cookie press fitted with the ribbon disk.

Pipe the dough into long strips onto parchment paper-lined cookie sheets. Or you can pipe into 2" strips. If you pipe into long strips, cut into 2" or 3" pieces.

Preheat oven to 325 degrees F. Bake the straws for 9-14 minutes until lightly colored. Remove to wire racks to cool. Makes about 50 crackers
