Crockpot Onion Dip

Cook onions in your crockpot until they caramelize, then mix in several kinds of cheeses until they melt for one of the best appetizer recipes ever.

Prep Time: 15 minutes

Cook Time: 8 hours

Total Time: 8 hours, 15 minutes

Yield: 3 cups dip

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 onions, chopped
  • 4 cloves garlic, minced
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 2 cups grated baby Swiss cheese
  • 1/4 cup sour cream
  • 1/2 teaspoon dried thyme leaves

Preparation:

Turn a 2-quart crockpot to high and add olive oil and butter; let butter melt. Add onions and stir. Turn heat to low and cook for 5-6 hours, stirring twice during cooking time, until onions are browned and caramelized. Stir in remaining ingredients. Cover and cook on low for 2-3 hours until cheeses have melted and dip is blended, stirring once during cooking time. Serve with crudites, crackers, and breadsticks. Keep warm in crockpot on low or 'keep warm' setting for up to 2 hours.

This dip was outrageous. I needed to short cut the process, so I did the carmelization step on the stovetop and then moved all the ingredients to the slow cooker for the last 2 hours. It was delicious. I don't think that slices of baguette ever had a better friend than this dip.
