Cranberry Turkey Puff Pastry Bites

Make these delicious tiny puff pastry sandwiches using leftover Thanksgiving turkey and cranberry sauce.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 sheet frozen puff pastry, thawed
  • 1-1/2 cups finely chopped cooked turkey
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. sour cream
  • 1/3 cup whole-berry cranberry sauce
  • 1/4 tsp. ground ginger

Preparation:

Preheat oven to 375 degrees. Gently press puff pastry sheet so it forms a square. Cut the sheet into 9 even squares. Bake on ungreased cookie sheet for 20-25 minutes until puffy and brown. Cool slightly. While still warm, split each pastry into 2 layers. Cool completely on wire racks.

Meanwhile, mix chopped turkey, mayonnaise, sour cream, cranberry sauce, and ginger in a small bowl. Spoon turkey mixture onto the split side of each baked and cooled puff pastry square, top with another, and serve. Serves 8-10
