Make these delicious puff pastry sandwiches using leftover Thanksgiving turkey and cranberry sauce.

Ingredients:
- 1 sheet frozen puff pastry, thawed
- 2 cups finely chopped cooked turkey
- 3 Tbsp. mayonnaise
- 1/4 cup sour cream
- 1/2 tsp. ground ginger
- 2/3 cup whole-berry cranberry sauce
Preparation:
Preheat oven to 375 degrees. Gently press puff pastry sheet so it forms a square. Cut the sheet into 9 even squares. (You can cut each square in half to make 18 rectangles if you'd like; for smaller sandwiches or appetizer bites.) Bake on sprayed cookie sheet for 20-25 minutes until puffy and brown. Cool slightly. While still warm, split each pastry into 2 layers. Cool completely on wire racks.
Meanwhile, mix chopped turkey, mayonnaise, sour cream, and ginger in a small bowl. Spoon turkey mixture onto the split side of each baked and cooled puff pastry square, top with cranberry sauce, then the top of each square. Serve immediately. Serves 4-6
