Turkey Cranberry Puff Pastry Bites

Make these delicious Cranberry Turkey Puff Pastry Bites sandwiches using leftover Thanksgiving turkey and cranberry sauce.

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: Serves 4-6


  • 1 sheet frozen puff pastry, thawed
  • 2 cups finely chopped cooked turkey
  • 3 Tbsp. mayonnaise
  • 1/4 cup sour cream
  • 1/2 tsp. ground ginger
  • 2/3 cup whole-berry cranberry sauce


Preheat oven to 375 degrees. Gently press puff pastry sheet so it forms a square. Cut the sheet into 9 even squares. (You can cut each square in half to make 18 rectangles if you'd like; for smaller sandwiches or appetizer bites.)

Bake on sprayed cookie sheet for 20-25 minutes until puffy and brown. Cool slightly. While still warm, split each pastry into 2 layers. Cool completely on wire racks.

Meanwhile, mix chopped turkey, mayonnaise, sour cream, and ginger in a small bowl. Spoon turkey mixture onto the split side of each baked and cooled puff pastry square, top with cranberry sauce, then the top of each square. Serve immediately.

Fabulous appetizer, Guest Cyn

Even my kids loved this one! I used plain yogurt instead of the mayonnaise and it was delicious. So pretty too.
