Fried Polenta with Tomato Salad

Keep a roll of prepared polenta and grape tomatoes on hand and you can whip up this delicious appetizer in about 15 minutes.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/2 (17-ounce) tube prepared polenta
  • 1/3 cup olive oil
  • 1 cup grape tomatoes, chopped
  • 3 tablespoons chopped fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper

Preparation:

Slice half of the polenta into 1/3" slices (refrigerate remaining half for another use). Heat olive oil in a large skillet. Fry polenta slices over medium-high heat, turning once, until browned and crisp, about 6-7 minutes.

While polenta is frying, combine remaining ingredients in medium bowl and let stand.

When polenta is crisp, drain on paper towels, then transfer to serving plate and top each with a spoonful of the tomato mixture. Serve immediately.
