This beautiful appetizer recipe is made of seemingly incongruous ingredients, but you'll be surprised at how much you love it.

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 1/4 cup olive oil
  • 3 tablespoons raspberry vinegar
  • Salt and pepper to taste
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon raspberry vinegar
  • 2 ripe avocados
  • 1 honeydew melon
  • 1/2 cup pomegranate seeds or raspberries, if desired

Preparation:

In small bowl combine olive oil, 3 tablespoons vinegar, salt, pepper, honey, and thyme leaves in small bowl and blend well with wire whisk. Cut avocados into chunks or use a melon baller. Sprinkle 1 tablespoon vinegar over avocado to prevent darkening as you work.

Use a melon baller on melon. Place cantaloupe and avocado in serving bowl or individual parfait glasses and sprinkle with pomegranate seeds or raspberries; drizzle dressing over all. Serve immediately. Serves 8-10

My guests just loved this appetizer. It's simple and elegant and unusual, just perfect for a starter course. I used my wedding goblets and my best silver spoons and it looked beautiful too.
