Mini Polenta Sandwiches

Oh - these little sandwiches are so special! It's hard to believe they're made with only five ingredients.

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 tube prepared refrigerated polenta
  • 1/4 cup olive oil
  • 2 plum tomatoes, cut into 1/4" slices
  • 1/4 pound Brie cheese, sliced
  • 16 fresh basil leaves

Preparation:

Preheat oven to 350 degrees F. Remove polenta from package and slice about 1/4" thick. Heat oil in heavy nonstick skillet over medium high heat. Add polenta slices for about 2-4 minutes per side until crisp and light brown. Remove to paper towel to drain.

Make sandwiches with polenta, tomato slices, Brie slices, and basil leaves. Secure with wooden toothpicks. Place on baking sheet and bake at 350 degrees F for 7-8 minutes until cheese melts and sandwiches are hot. Serves 8
