New Buffalo Chicken Wings

Read all about the original wings here! This updated version is lower in fat, gives you more meat to savor, and is easier to eat. Perhaps you'd like to make both, and have a taste test?

Prep Time: 25 minutes

Cook Time: 10 minutes

Total Time: 35 minutes

Ingredients:

  • 1/4 cup honey
  • 1/3 cup cocktail sauce
  • 1 Tbsp. soy sauce
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. brown sugar
  • 1/8 tsp. pepper
  • 1 tsp. hot red pepper sauce
  • 4 skinless, boneless chicken breasts, cut into 1/2" strips
  • 2/3 cup blue cheese salad dressing
  • 1/2 cup sour cream
  • 2 Tbsp. mayonnaise
  • 1/4 cup blue cheese, crumbled
  • 1 celery stalk, finely chopped
  • 1/8 tsp. white pepper
  • 1-1/2 cups crushed cornflake cereal crumbs
  • 1 Tbsp. olive oil
  • 2 Tbsp. butter

Preparation:

Combine honey, cocktail sauce, soy sauce, vinegar, brown sugar, pepper, and hot red pepper sauce in large bowl. Add chicken strips, stir gently, cover, and refrigerate 6-8 hours to marinate.

In a small bowl, combine salad dressing, sour cream, mayonnaise, blue cheese, chopped celery, and white pepper, mix well, cover and refrigerate.

When ready to serve, drain chicken, placing marinade in a small saucepan. Drop chicken strips into the crushed cornflakes and roll to coat. Heat olive oil and butter in a large nonstick skillet over medium heat. Add coated chicken strips and cook until coating is browned and crisp and chicken is thoroughly cooked, turning once, about 7-9 minutes.

Meanwhile, boil marinade for 3 minutes until slightly thickened.

Place chicken on serving platter, drizzle with cooked marinade, and serve with blue cheese sauce. Serves 8-10

I love this recipe because it's easier to eat than the traditional wings and you get more meat out of each bite. I also like that the chicken isn't deep fried. I double the dressing because it's so good. Thanks for the recipe!
