Parmesan Wafers with Figs

These lacy, crisp wafers made out of just freshly grated Parmesan cheese are called frico. You can serve them on their own, without the figs and honey if you'd like.

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 20 minutes

Ingredients:

  • 2 cups freshly grated Parmesan or Pecorino cheese
  • 2 ripe figs, sliced, or 8 Medjool dates, sliced
  • 3 Tbsp. honey
  • 1/2 teaspoon dried thyme leaves

Preparation:

Spray a nonstick skillet with cooking spray and heat over medium heat. Make two circles of Parmesan cheese on the skillet, each about 4" across, just thick enough so you can't see the bottom through it. This should take about 2 tablespoons of the cheese.

Cook on first side for 2 minutes, watching carefully, until the edges are golden. Carefully turn wafers and cook 1 minute longer. Gently flatten with spatula if they begin to curl or fold. Remove from pan and drain on paper towels, then when firm, remove to wire rack to cool completely. Repeat until all the cheese is used.

To serve, top each cheese wafer with some fig or date slices. Combine honey and thyme in small bowl and drizzle over fruit.

I made this recipe for a women's only cocktail party last night at a friend's house. I was looking for something that presented well, was not a dessert, had some substance, and did not have to be warmed up or eaten right away. This was perfect. More than half of the 20 guests made a point of expressing their enjoyment of these appetizers. Quick to make, very good combination of textures and flavours, and rather healthful. I misread the recipe and used dried figs (sliced in half 'bagel-wise') but it didn't seem to matter one bit to the tasty outcome!
