Great Pumpkin Cheese Ball

By Linda Larsen, About.com

You can, of course, just make this cheese ball and serve it without decorating it for Halloween. You can make this in one large ball, or several small ones. Then as your guests eat it, you can bring out a fresh cheese ball.

Prep Time: 30 minutes

Ingredients:

  • 2 cups grated Havarti cheese
  • 8 oz. pkg. cream cheese, softened
  • 3 oz. pkg. cream cheese, softened
  • 1 tsp. dried thyme leaves
  • 1 tsp. dried chives
  • 1 garlic clove, crushed
  • 1/4 cup mayonnaise
  • Yellow and red food coloring
  • Red and green bell peppers for garnish

Preparation:

Cream together Havarti, cream cheese, thyme, chives and garlic in a large bowl. Shape into a 5" ball, or shape into 3 2" balls.

Mix together mayonnaise and enough food coloring to make a pumpkin orange color. Frost the cheese ball with the mayonnaise mixture. Using a knife, draw lines vertically on the ball to resemble a pumpkin. Make eyes, nose, mouth, and stem with bell pepper pieces. Refrigerate until serving time. Serve with crackers and sliced apples.

You can just roll this ball in chopped toasted cashews or pecans instead of decorating it, if you like.
