Roasted Red Pepper Mini Pizzas

Just four ingredients combine to make a delicious last minute appetizer pizza recipe. You can vary this recipe any way you'd like, with extra toppings or different cheeses.

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 1 (8-ounce) jar roasted red bell peppers, drained
  • 1 cup diced Havarti or Swiss cheese
  • 24 water crackers
  • 1 tablespoon fresh thyme or oregano leaves

Preparation:

Preheat oven to 400 degrees F. Drain red peppers on paper towels to remove as much moisture as possible. Coarsely chop. Combine in medium bowl with diced cheese and mix gently.

Place crackers on Silpat lined cookie sheet. Divide red pepper mixture among crackers. Bake for 4-8 minutes or until cheese is melted and pizzas are hot. Sprinkle with thyme and serve immediately.

You can add jarred sliced mushrooms, chopped pepperoni, cooked sausage, or a second cheese to these easy appetizers. Topping can be placed on toasted baguette slices or small pita breads.
