Roast Beef Roll-Ups

Roast Beef Roll-Ups is a delicious and classic recipe that is smooth, crunchy, suave, and slightly spicy. And it's made ahead of time, so you can enjoy the party too.

Prep Time: 30 minutes

Ingredients:

  • 1 (8-ounce) package cream cheese, softened
  • 2-3 tablespoons prepared horseradish
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon dill seed
  • 12 (1/4" thin) slices deli roast beef
  • 2 cucumbers

Preparation:

In small bowl, beat cream cheese until softened. Add horseradish, mustard, and dill seed and beat until smooth.

Arrange roast beef slices on work surface. Gently spread cream cheese mixture over each slice.

Peel cucumbers and cut in half. Using a spoon, remove the seeds and discard. Cut cucumbers into thin strips about 3 inches long. Arrange cucumber strips on cheese mixture, then roll the beef around them. Cover and chill for 1-2 hours before serving.

To serve, cut rolls into 1-inch slices and arrange, cut side up, on platter. Serves 6-8
