Roasted Red Pepper Spread

Serve this delicious recipe with water crackers for a wonderful beginning to your holiday meal.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • 2 (16 oz.) cans garbanzo beans, rinsed and drained
  • 1/2 cup lemon juice
  • 2 (6 oz.) jars roasted red peppers, drained
  • 1/4 cup tahini
  • 1 Tbsp. minced onion
  • 3 cloves minced garlic
  • 2 Tbsp. chopped parsley
  • 2 tsp. smoked paprika
  • 1/8 tsp. white pepper
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 2-4 Tbsp. oil

Preparation:

Combine all ingredients in food processor or blender. Blend or process until mixture is fairly smooth, adding oil as needed for desired consistency. Place in serving bowl, cover, and chill for 2-3 hours before serving. Serve with toasted french bread or water crackers.

Fixed this over the hoiiday and it was excellent. When re-making I believe I would use a bit less roasted red pepper and a bit more garlic. The roasted red pepper was a bit overpowering (of course it is a red pepper spread). We will be making it again - it is a crowd pleaser.
