Salad Bites is an excellent last-minute appetizer recipe made with deli salads and frozen mini filo shells (one of my favorite things!).
Prep Time: 10 minutes
Ingredients:
- Selection of deli salads
- Frozen mini filo shells, thawed
- Chopped parsley
- Grated Parmesan cheese
Preparation:
Choose a good selection of deli salads; a pint or two of each is fine. You can jazz them up with additions if you'd like; taste them to make sure they're good. You can also use homemade salads, like Fresh Corn Salad or Steak and Antipasto Salad instead.Arrange the salads in pretty bowls with the filo shells and small spoons. Let your guests spoon the salad they want into the filo shells; then they're easy to eat in one bite. Serves 10-12
