This recipe combines two of my favorite flavors: scampi (lemon with garlic) and pesto. It's elegant enough for the fanciest party, but so easy to make.

Cook Time: 5 minutes
Total Time: 20 minutes
Ingredients:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon grated lemon zest
- 1 pound large raw shrimp (22 per pound), deveined and shelled
- 1/4 cup lemon juice
- 1 cup mayonnaise
- 1/2 cup basil pesto
Preparation:
In large skillet, melt butter with olive oil. Add garlic; cook and stir for 1-2 minutes until fragrant. Add lemon zest and shrimp; cook and stir for 2-3 minutes until shrimp curl and turn pink. Add lemon juice and remove from heat. Cool 10 minutes, then pour into serving bowl, cover, and refrigerate.
In small bowl, mix mayonnaise with pesto. Cover and refrigerate until ready to serve. To serve, place pesto mixture next to shrimp. Serves 8
