Turkey and Cranberry Pastry Puffs are a wonderful way to use up leftover cooked turkey or chicken.

Ingredients:
- 1-1/4 cups finely diced cooked turkey or chicken
- 2/3 cup shredded Gouda or Havarti cheese
- 1/4 cup chopped dried cranberries
- 2 tablespoons sour cream
- 1/2 teaspoon dried thyme leaves
- 2 packages frozen puff pastry, thawed
- 1 egg, lightly beaten
Preparation:
Preheat oven to 400 degrees F. In medium bowl, combine turkey, cheese, cranberries, sour cream, and thyme; mix well.
Unfold puff pastry and place on lightly floured surface. Cut the pastry into 3" circles using a cookie cutter. Place 1 teaspoon of the turkey filling in the center of each circle. Brush around the edge of each circle with the beaten egg. Fold circles in half, enclosing filling, and press edges to seal.
Bake on ungreased cookie sheet for 17-22 minutes until pastries are golden brown. Cool 10-15 minutes before serving. Makes about 3 dozen appetizers.
