Watermelon Hors d'Oeuvres

This super refreshing appetizer cools you down on a hot day and revs up your appetite. You can leave out the tequila if you wish.

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • 1/2 cup lime or lemon juice
  • 1 tsp. tequila, if desired
  • 2 Tbsp. honey
  • 1/2 tsp. salt
  • dash white pepper
  • 1/8 tsp. tabasco sauce
  • 4 lbs. watermelon, cut into cubes and seeded
  • 1 cup crumbled blue cheese or feta cheese

Preparation:

Mix all ingredients except watermelon in small bowl and stir to dissolve honey. Taste for seasoning, cover, and chill for 1-2 hours to blend flavors.

To serve, dip watermelon in juice mixture, then sprinkle with blue cheese and eat. Serves 10-12

Needed a little something more, Guest JK Belote

I added fresh cut pineapple to this recipe, doubled the lime juice and honey and added a full teaspoon of Tobasco sauce. I didn't have pre-crumbled blue-cheese so I faked it and added a 1/4 pound of regular blue cheese. If you can find a good quality pre-crumbled blue cheese your in business. I was pressed for time and couldn't afford to hunt for the crumbled so I went with regular. It was still amazing. Try this and you'll love it. It is really not a spicy hot dish despite the tobasco sauce.
