Apricot Banana Bars

I love the combination of flavors and textures in this easy bar cookie.

Cook Time: 25 minutes

Total Time: 50 minutes

Ingredients:

  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 cup apricot preserves
  • 1 tsp. vanilla
  • 2 eggs
  • 2 cups flour
  • 3/4 cup mashed bananas (about 2 ripe bananas)
  • 2/3 cup chopped walnuts
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/8 tsp. cardamom
  • 1/3 cup chopped dried apricots
  • 1/3 cup granulated sugar
  • 1 tsp. cinnamon

Preparation:

Preheat oven to 350 degrees. Grease and flour a 15x10" jelly roll pan. In large bowl, combine brown sugar, 1/4 cup granulated sugar, and butter. Cream together until well blended. Add preserves, vanilla and eggs and blend well. Add remaining ingredients except dried apricots, 1/3 cup sugar, and cinnamon and mix until blended. Stir in dried apricots. Combine 1/3 cup granulated sugar and cinnamon in small bowl.

Spread into prepared pan and sprinkle with cinnamon sugar. Bake at 350 degrees for 25-30 minutes or until golden brown and top springs back when lightly touched in center. Cool and cut into bars. 30 bars

I just made these apricot Banana Bars.. I look for recipes which I have all the items for. Anyway, I didn't add the nuts, but I did add mini choco chips. I didn't sprinkle the cinnamon on top either. They are delish...
