Butterscotch Brownies

Butterscotch Brownies are wonderful, super quick and easy bar cookies you can make with ingredients in your pantry.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 36 bars


  • 1/2 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chopped cashews or walnuts, if desired
  • Caramel Frosting OR Fluffy Caramel Frosting, if desired


Preheat oven to 350 degrees F. In heavy saucepan, melt butter over low heat. Then remove from heat and stir in sugar until blended. Add eggs and vanilla and beat until combined. Add dry ingredients and mix. Stir in nuts, if using, and spread into a greased 13x9" pan. Bake at 350 degrees F. for 30 minutes. Then cool on wire rack and cut into squares.

Frost with Caramel Frosting if desired.

Had this receipe for years then lost it. Made these for my dad almost every day one month, several years ago while visiting him. They tend to get hard the next day and he loved to dunk them in his coffee through the day. This is a very rich cookie and I add some black walnut and butter flavoring which makes them taste richer. If you like butterscotch cookies and walnuts this is the cookie to go with. It takes little time to prepare, looks terrible and tastes fantastic. If you want a bit of chocolate taste with your butterscotch then melt some chocolate bits on top as you remove from the oven and spread like icing.....talk about guilding the lily. lol
