Chocolate Peanut Butter Crunch Bars

This classic cookie is really delicious; the chocolate and peanut butter combination with a bit of crunch is especially loved by kids.

Prep Time: 25 minutes

Cook Time: 20 minutes

Total Time: 45 minutes

Yield: 48 bars

Ingredients:

  • 1-1/4 cups brown sugar
  • 1 cup butter, softened
  • 2/3 cup peanut butter
  • 2 tsp. vanilla
  • 1 egg
  • 2 cups flour
  • 1/2 tsp. baking soda
  • 2 cups semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup peanut butter
  • 3 cups crisp rice flake cereal (Special K)

Preparation:

Preheat oven to 325 degrees. Combine brown sugar, butter, and 2/3 cup peanut butter in large bowl and beat until combined. Add vanilla and egg and mix well. Stir in flour and baking soda until dough forms. Press into ungreased 15x10" jelly roll pan. Bake for 13-18 minutes or until just set. Cool while preparing topping.

Combine chocolate chips, milk chocolate chips, and 1 cup peanut butter in a microwave-safe bowl. Microwave on 50% power for 2 minutes, then remove and stir until melted and smooth. Stir in cereal. Spread this mixture over bars. Cool completely before serving.

I made these bar cookies this week for a neighborhood party and they were a big hit. Several people wanted the recipe as they love the combination of chocolate and peanut butter. This recipe was very easy and took perhaps a total of one hour to put together, bake and cut up for serving. I put the pan in the refrigerator to cool for 2 -3 hours before slicing them. They taste great right out of the frig or at room temp. I also made them in a 13 X 9 pan as I don't own a 10 X 15 pan and they came out just fine being a little thicker. I can't wait to make them again. Also, they are very filling so a great snack food---they stick to your ribs, as they say.
