Crisp Chocolate Caramel Bars

This wonderful recipe can be a bit difficult to cut. Make sure to use a very sharp knife and cut with a swift motion. They are worth the trouble - the taste is fantastic!

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 1-1/4 cups flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, chilled
  • 14-oz. pkg. caramels, unwrapped
  • 1/3 cup milk
  • 1/4 cup butter
  • 1 cup semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1/3 cup peanut butter
  • 2 cups crisp rice flake cereal (NOT Rice Krispies)

Preparation:

Preheat oven to 350 degrees. Combine flour and powdered sugar in large bowl and mix well. Cut in 1/2 cup butter until particles are fine and butter is well distributed. Press into a 13x9" pan and bake at 350 degrees for 10-12 minutes until light golden brown.

In microwave-safe bowl, combine caramels, milk, and 1/4 cup butter and microwave on high for 2 minutes. Remove and stir, then continue microwaving for 30 second intervals on high, stirring after each interval until melted and smooth. Spread over baked crust.

In another microwave-safe bowl, combine both kinds of chocolate chips and peanut butter, microwave on 50% power for 2 minutes, then remove, stirring until smooth. Stir in cereal. Drop this mixture by spoonfuls over caramel and spread to cover. Cool completely, then cut into squares. 48 bars
