These delicious and moist brownies are surrounded by a crunchy brown sugar and oatmeal crust.

Prep Time: 25 minutes

Cook Time: 35 minutes

Ingredients:

  • 2 cups quick cooking oats
  • 2 cups flour
  • 1-1/2 cups brown sugar
  • 1 teaspoon baking soda
  • 1 cup butter, melted
  • 2/3 cup butter
  • 1/2 cup cocoa powder
  • 1-1/2 cups sugar
  • 4 eggs
  • 1-1/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup semisweet chocolate chips

Preparation:

Preheat oven to 350 degrees F. Grease the bottom of a 13x9" pan and set aside.

In large bowl, combine oats, 2 cups flour, brown sugar, and 1 teaspoon baking soda and mix well. Add 1 cup melted butter and stir until crumbs form. Press one half of this mixture into the bottom of prepared pan; set aside. Reserve remaining crumbs.

In large saucepan, melt 2/3 cup butter with cocoa until smooth. Remove from heat and stir in 1-1/2 cups sugar. Then add eggs and beat well. Stir in 1-1/4 cups flour, 1 teaspoon baking powder, and salt until smooth. Add walnuts and chocolate chips. Spoon brownie batter on top of oatmeal crust, spreading carefully to cover. Sprinkle with remaining oatmeal crumbs.

Bake at 350 degrees F for 30-38 minutes or until oatmeal topping is light golden brown. Do not overbake! Let cool, then cut into bars.
