Fruitcake Squares

Fruitcake Squares are an easy variation on Magic Cookie Bars. Add some candied fruit, chopped dates and dried apricots to the classic recipe for a holiday treat.

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Ingredients:

  • 1/2 cup butter, melted
  • 2 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1-1/2 cups chopped mixed candied fruit
  • 1 cup chopped dates
  • 1/2 cup chopped dried apricots
  • 2 tablespoons honey
  • 1 (14-ounce) can sweetened condensed milk (NOT evaporated milk)

Preparation:

Preheat oven to 350 degrees F. Line a 9" x 13" pan with heavy duty foil and spray the foil with nonstick baking spray containing flour.

Pour butter into prepared pan. Sprinkle evenly with graham cracker crumbs, press down gently, then top with coconut and pecans.

In medium bowl, combine fruit, dates, and apricots. Drizzle honey over all and stir gently to coat. Spoon fruit mixture evenly over pecans in pan. Drizzle sweetened condensed milk evenly over all ingredients.

Bake for 25-35 minutes or until bars are set. Let cool completely on wire rack. Cut into bars when cool. Makes about 36 bar cookies
