Oatmeal Brownies

This delicious bar cookie recipe has an oatmeal crust, a brownie filling, and crumbling oatmeal topping; yum.

Prep Time: 20 minutes

Cook Time: 25 minutes

Ingredients:

  • 21 oz. pkg. brownie mix
  • 1 cup rolled oats
  • 1 cup chopped pecans
  • 1/4 cup butter, melted
  • 1/3 cup water
  • 1/4 cup oil
  • 1 egg

Preparation:

Preheat oven to 350 degrees F. Grease a 13x9" pan and set aside. In a medium bowl, mix 1 cup brownie mix, oats, pecans, and melted butter until crumbly. Press 1-1/2 cups of this mixture into prepared pan and bake at 350 degrees F for 8 minutes. Reserve remaining crumb mixture.

In a large bowl, mix remaining brownie mix, water, oil, and egg and beat until thoroughly combined. Pour over partially baked oatmeal crust and gently spread to edges of pan. Sprinkle with reserved oatmeal crumb mixture.

Bake at 350 degrees for 20-25 minutes or until edges are light golden brown. Center will not be firm; that's okay; it will set as the bars cool. Do not overbake. Cut into bars when cool. 24 bars
