There are many versions of this spectacular layered bar floating around. This one is the best. Oatmeal Carmelitas are filled with caramel and chocolate.

Prep Time: 25 minutes

Cook Time: 25 minutes

Total Time: 50 minutes

Yield: 24 servings

Ingredients:

  • 2 cups flour
  • 2 cups quick cooking rolled oats
  • 1-1/2 cups firmly packed brown sugar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup butter, melted
  • 14 oz. pkg. light caramels, unwrapped
  • 1/3 cup light cream
  • 2 cups semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup chopped pecans

Preparation:

Preheat oven to 350 degrees. Grease 13x9-inch pan and set aside. In large bowl, combine flour, oats, sugar, soda and salt and blend. Add melted butter and mix until crumbly. Reserve half of crumb mixture (about 3 cups) for topping. Press remaining crumb mixture in bottom of greased pan.

In a small bowl, combine caramels and cream. Heat in microwave oven for 4-6 minutes on 50% power, stirring twice during cooking, until caramels are melted and mixture is smooth.

Sprinkle chocolate chips and pecans over reserved crust. Drizzle evenly with melted caramel mixture and sprinkle with reserved crumb mixture.

Bake at 350 degrees for 20-25 minutes or until light golden brown. Cool 1 hour or until completely cooled. Cut into bars.

I didn’t do anything different than what the recipe called for, but I do consistently drop baking time off of recipes, so I baked it for 18 minutes instead if 20-25 minutes. I made sure that the topping was a light golden brown before taking them out. I also used regular caramels and regular cream instead of light. For taste I am going to break it down by layer. I liked how melting the butter before mixing it in with the oatmeal mixture made for a even buttery taste throughout. At first I was prepared to say that I wouldn’t mind eliminating the one cup of milk chocolate chips from the recipe. However, I think it is the touch of milk chocolate that highlights and pairs with saltiness of the caramel and pecans. With that said, I would maybe reduce the total amount of chocolate chips because the chocolate was just a touch too overpowering (if I am going to get picky about it). The caramel mixture was gooey and tasty. Texture…a few things stand out. What I liked most about these bars were that they were so thick. I liked the buttery crumbliness of the oatmeal mixture. I also liked how the chocolate and caramel each melted into their own gooey layer of deliciousness.
