These Rice Krispies treats with rainbow sprinkles look just like Funfetti cake. They are easy and fun to make and a perfect recipe to introduce young kids to the joy of cooking.

Regular Rice Krispies treats are a go-to dessert or snack, but they are a basic beige to tan and certainly not festive-looking. The addition of rainbow sprinkles for a confetti look makes them much more appealing and they will look great stacked on a plate to serve guests at a children's party. If you are also serving cake or cupcakes made with Pillsbury's Funfetti baking products, they will match the theme.

You can use the brand name Kellogg's Rice Krispies cereal for this recipe, or any generic rice crispy cereal.

How To Make Rice Krispies Treats in the Microwave

Instead of using a stovetop, you can place the butter and marshmallows in a microwave-safe bowl and heat on high for 3 minutes in the microwave, stirring after two minutes until the mixture is smooth. Then proceed to stir in the cereal and sprinkles.

Think Beyond the Square

While square rice krispies treats are standard, you can cut or shape the mixture into all kinds of fun shapes. Let the pan of treats cool slightly. Then spray your favorite cookie cutters with cooking spray and cut the treats into shapes. After cutting as many shapes as you can, press the remaining treat mixture together and again cut more shapes. Repeat this until you have cut as many shapes as possible, then cut the remaining portion into squares.

You can also roll the slightly cooled treat mixture into balls. Then roll the balls into a dish of sprinkles for even more color. Or shape the slightly-cooled treat mixture into round doughnuts. Decorate your shaped treats further with frosting or decorating gel.

  2. Heat the butter in a saucepan over medium heat until melted.

  3. Add the marshmallows and cook on low heat until the marshmallows have completely melted, stirring occasionally.

  4. Stir in the Rice Krispies. Then stir in the rainbow sprinkles.

  5. Spread the mixture into a 9 x 9-inch greased baking dish.

  6. Top with additional rainbow sprinkles. Allow the dish to cool so the treats become firm.

  7. When firm, cut the treats into squares and serve.

How To Store Rice Krispies Treats

  • You can store the treats at room temperature in an airtight container for up to two days. If you are storing them longer, keep them refrigerated in an airtight container for up to two weeks.
  • For even longer storage, place them in layers between sheets of wax paper and freeze. They will be good for up to six weeks when frozen. To serve them after freezing, then warm up at room temperature for 15 minutes.

Recipe Variations

  • As an alternative to regular marshmallows, you can use 4 cups of miniature marshmallows or one 7-ounce jar of marshmallow crème. Heat in the same way you do with regular marshmallows.
  • For a chocolate variation, use chocolate sprinkles instead of rainbow sprinkles. If desired, spread melted chocolate in a thin layer on top.
