Chewy Picnic Bars

This simple bar cooky recipe has a wonderful chewy texture; they pack well too, for picnics or lunchboxes.

Prep Time: 25 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 cup flour
  • 1/3 cup brown sugar
  • 1/4 cup finely chopped walnuts
  • 1/3 cup butter, melted
  • 2 eggs
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 2 tsp. vanilla
  • 1 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 cup chopped dried cherries
  • 1 cup chopped walnuts, toasted
  • 2/3 cup shredded coconut
  • 1/2 cup finely chopped dates
  • powdered sugar

Preparation:

Preheat oven to 350 degrees. For crust, mix 1 cup flour, 1/3 cup brown sugar, and 1/4 cup walnuts; then blend in melted butter until crumbs form. Press into greased 9x13" pan. Bake at 350 degrees F for 10 minutes until very light golden brown; place on wire rack.

Meanwhile, in large bowl beat eggs until fluffy. Gradually add 1/4 cup sugar and 3/4 cup brown sugar, beating until light. Then stir in vanilla. Add 1 Tbsp. flour, baking powder and salt. Then add dried cherries, walnuts, coconut and dates. Pour over partially baked crust, and bake 20-25 minutes longer until bars are set. Cool for about 1 hour, then cut into bars and roll in powdered sugar. Store in airtight container at room temperature.
