Salted Peanut Bars

These wonderful bar cookies are just like the candy bar!

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

  • 1-1/2 cups flour
  • 2/3 cup brown sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 cup butter, softened
  • 1/4 cup peanut butter
  • 1 tsp. vanilla
  • 3 cups miniature marshmallows
  • 2/3 cup light corn syrup
  • 1/4 cup butter
  • 1 cup peanut butter chips
  • 1/2 cup white chocolate chips
  • 1/4 cup peanut butter
  • 2 cups crisp rice flake cereal
  • 1-1/2 cups salted peanuts

Preparation:

Preheat oven to 350 degrees. Combine flour, brown sugar, baking powder, salt, baking soda, 1/2 cup butter, 1/4 cup peanut butter, and vanilla in large bowl and beat until crumbly. Press in a 13" x 9" baking pan. Bake at 350 degrees for 12-15 minutes until very light golden brown. Remove from oven and immediately sprinkle with miniature marshmallows.

Return to oven and bake about 2 minutes longer until the marshmallows begin to puff. Remove from oven.

While bars are baking, combine corn syrup, 1/4 cup butter, peanut butter chips, white chocolate chips, and 1/4 cup peanut butter in a large saucepan. Cook over low heat until melted and smooth, stirring frequently. Stir in cereal and salted peanuts and immediately pour over the hot bars. Spread gently to cover. Cool and cut into bars. 36 bars
