This delicious and elegant main dish recipe is so full of flavor. Garlic gets smooth and mellow as it cooks, as does the horseradish.

Cook Time: 1 hour, 50 minutes
Ingredients:
- 1 head garlic
- 1 Tbsp. olive oil
- salt and pepper to taste
- 3 lb. beef tenderloin roast
- 1/3 cup prepared horseradish
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1/2 tsp. dried thyme leaves
Preparation:
Preheat oven to 350 degrees F. Remove excess papery skin from garlic head and cut off top 1/4" of head. Place on foil square, drizzle with olive oil, and sprinkle with salt and pepper to taste. Wrap in foil and bake at 350 degrees F for 50-60 minutes until soft. Squeeze flesh from head and mash together with remaining ingredients except tenderloin roast.
Increase oven to 400 degrees F. Spread garlic mixture over roast to coat evenly. Place on baking pan and roast at 400 degrees F for 40-50 minutes until thermometer registers 150 degrees for medium rare, to 165 degrees for medium. Let meat stand, covered, at room temperature for 10 minutes before carving. Serves 6-8
