Savory Pressure Cooker Pot Roast

This simple recipe for Savory Pressure Cooker Pot Roast lets you serve homestyle tender, savory beef in just about an hour!

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Yield: Serves 6-8


  • 3-4 lb. beef chuck roast
  • 1/2 tsp. salt
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. smoked paprika
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth


Trim excess fat from roast. In a small bowl, combine salt, seasoned salt, pepper, and paprika. Rub this mixture into all sides of the meat.

In pressure cooker, combine seasoned beef with onion, garlic, and beef stock. Place lid on pressure cooker, lock down and cook under 15 pounds pressure (high) for 50-60 minutes. Bring down pressure and open the cooker; test the meat to see if it is tender and at least 140 degrees F in the center on an instant meat thermometer. If not, you can put the cooker back together and pressure cook for another 5-10 minutes.

Turned out great. Some people mention using two cups of broth for the recipe, where the recipe calls for four cups. Not sure if people are getting confused with cups and cans, or if the recipe was changed somewhere along the line. I have a Fagor pressure cooker and they're known for their low evaporation losses. I had plenty of liquid left when I was done, and if I were to do it again I would probably go with one can / two cups of broth instead of four cups. I cooked it for 55 minutes. If I were to do it again I would also cut back on that by a few minutes, maybe 45-50 minutes total. Again, the Fagors are known to run very close to 15 psi, where some other cookers may fall a little short. Added a little splash of wine to the liquids and that added a nice hint of flavor.
