Sliced Corned Beef

Sliced Corned Beef

Linda Larsen
Classic Corned Beef is a super easy recipe. Just buy a nice piece of corned beef from the supermarket and simmer it.

Prep Time: 5 minutes

Cook Time: 2 hours, 50 minutes

Total Time: 2 hours, 55 minutes

Yield: Serves 6-8

Ingredients:

  • 1 (3-pound) slab corned beef
  • water
  • 1/2 cup sour cream
  • 1/4 cup Dijon mustard

Preparation:

Place the corned beef, with all its seasonings and juices from the package, in a large pot. Add water to cover.

Place the pot over high heat and bring to a boil. Reduce heat to low, cover the pot, and simmer for 2-1/2 to 3 hours until the beef is fork-tender. Remove the beef from the liquid, discard the liquid, and cover the beef tightly with foil. Let stand 10 minutes.

To slice, look for the grain of the meat - lines that run across the beef. Slice against those lines at a perpendicular angle.

Mix sour cream and Dijon mustard and serve that with the beef.

This is the way to a delicious corned beef dinner! Love the sour cream and Dijon mustard for serving. I did take out the beef when it was done and kept warm in 200ºF oven wrapped in foil. Added cabbage wedges, potatoes, carrots and onions (all cut into chunks) to the liquid and simmered until tender. Thanks for another keeper, Linda!
