Beef Stacks

This simple recipe can be made with pickled onions or marinated green beans. Browse through your grocer's aisle to find other pickled ingredients you could use; sliced olives would also be delicious.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 lb. beef filet mignon steak
  • 1/2 lb. cheddar or Swiss cheese, thinly sliced
  • 12 marinated green beans, plus some liquid, OR 12 slices marinated artichoke hearts, plus some liquid
  • salt and pepper to taste

Preparation:

Prepare and heat grill, if using. Sprinkle beef with salt and pepper and cook on grill or under broiler for about 12-16 minutes (medium), until desired doneness, turning once during cooking. Cover with foil and let rest for 10 minutes, then slice very thinly against the grain. Slice green beans or artichokes very thinly.

Layer beef and cheese slices on each plate. Top with whole green beans or sliced artichokes and drizzle with some of the reserved liquid. Serves 4
