Rosemary Beef and Tomatoes

This simple dish has a fresh flavor because of fresh plum tomatoes and rosemary.

Prep Time: 15 minutes

Cook Time: 10 hours

Ingredients:

  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 lbs. beef sirloin tip, cubed
  • 1/2 cup beef broth
  • 5 plum tomatoes, chopped
  • 1 Tbsp. chopped fresh rosemary (do NOT used dried rosemary)
  • 1/2 tsp. dried thyme leaves
  • 4 cups egg noodles, cooked

Preparation:

In medium saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir for 4 minutes. In 4-6 quart crockpot, combine onion mixture, salt, pepper, and beef and mix. Pour beef broth over, then cover and cook on low for 9-10 hours.

Add tomatoes, rosemary, and thyme to beef in crockpot, increase heat to high and cook for 20-25 minutes until tomatoes are hot. Serve over hot cooked egg noodles. 4 servings
