Crockpot Mexican Round Steak

This easy one dish Mexican meal uses a crockpot and only five ingredients.

Prep Time: 15 minutes

Cook Time: 8 hours

Ingredients:

  • 1-1/2 lbs. boneless beef round steak
  • 2 cups frozen corn, thawed and drained
  • 18 oz. jar chunky garden salsa
  • 14 oz. can black beans, rinsed and drained
  • 1 onion, chopped
  • 1/2 cup water
  • 1/2 tsp. salt
  • 1/8 tsp. crushed red pepper flakes

Preparation:

Cut beef into 6 serving-size pieces and trim excess fat. Place in a 3-4 quart slow cooker. Mix remaining ingredients in a medium bowl and pour over beef. Cover crockpot and cook on low for 8-9 hours until beef is tender. 6 servings
