Microwave Mexican Cube Steak

Cube steaks are round steaks that the butcher has run through a tenderizer or cube steak machine. Sometimes these steaks are made of bits of less tender meat mixed together and run through the machine. To make sure you're getting the best quality, and what you paid for, you can buy a round steak and ask the butcher to send it through the machine, or pound the steak yourself using a meat mallet.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 beef cube steaks
  • 1 cup chunky salsa
  • 1 cup shredded Pepper Jack cheese
  • 1 avocado, peeled and sliced

Preparation:

Arrange steaks in an 8" square microwave safe dish. Cover loosely with waxed paper and cook on HIGH for 6-8 minutes, turning beef over and rearranging after 3 minutes, until almost done. Drain.

Top each steak with salsa. Cover loosely with waxed paper and cook on HIGH for 2-3 minutes or until salsa is hot. Sprinkle each with cheese and cover. Let stand 2 minutes until cheese is melted. Top with avocado slices and serve. 4 servings
