Orange Mint Slush

This simple beverage recipe is a great one to have on hand during the hot summer months.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 cups sugar
  • 6 cups water
  • 1/3 cup fresh whole mint leaves
  • 12 oz. can frozen orange juice concentrate
  • 6 oz. can frozen lemonade concentrate
  • 6 cups club soda
  • sprigs fresh mint

Preparation:

In a heavy saucepan, mix sugar, 3 cups of the water and mint leaves. Bring to boil, then reduce heat and let simmer for 2 minutes. Remove pan from heat and cool 1 hour. Strain mixture and reserve liquid. In large non metal freezer container, combine strained liquid, remaining water, orange juice concentrate and lemonade concentrate and mix well until blended.

Cover and freeze until solid. To serve, scrape 2/3 cup slush mixture into a serving glass and slowly pour 1/3 cup club soda over slush. Garnish with sprigs of fresh mint.
