Bread Machine Caramelized Onion Focaccia

The dough is formed in the bread machine and allowed to rise, then removed and shaped, topped with a caramelized onion topping, and baked until golden and crunchy.

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

  • 3/4 cup water
  • 2 Tbsp. olive oil
  • 2 cups bread flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1-1/2 tsp. bread machine yeast
  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded provolone cheese
  • 3 Tbsp. grated Parmesan cheese

Preparation:

Place water, 2 Tbsp. olive oil, bread flour, sugar, salt, and yeast in bread machine in order recommended by the manufacturer. Select Dough/Manual cycle and let machine work until dough forms. When dough has finished, grease a cookie sheet and pat the dough into a 12" circle on the sheet. Cover and let rise in warm place about 30 minutes or until almost double. Meanwhile, prepare Onion Topping.

For Onion Topping, melt butter and 1 Tbsp. olive oil in heavy skillet over medium low heat. Cook onions and garlic in butter for 15-20 minutes, stirring frequently, until onions are brown and caramelized. Set aside.

Heat oven to 400 degrees F. Make deep indentations in dough at 1" intervals with your fingers. Spread Onion Topping over dough, then sprinkle with cheeses. Bake at 400 degrees F for 15-18 minutes or until edges are golden brown. Cut into wedges and serve warm.
